These Biscuits “Bit the Biscuit”.

  • Sad Mistaken Buttermilk Biscuits

     “SH*T.”

    That’s what you say when you realize after you’ve patted your mound of Buttermilk Biscuit dough out before cutting it into cute little circles that you’ve FORGOTTEN THE BAKING SODA.

    Some ingredients are okay to forget.  For example, when you’re making a batch of the World’s Greatest Fudge Brownies and you forget to add the cup of toasted nuts, everything in the world is okay because really, they are the World’s Greatest Fudge Brownies with or without the nuts.  But when you forget to add BAKING SODA to biscuits, it’s like forgetting to add chocolate to the World’s Greatest Fudge Brownies.  It’s irreparable.  And stupid.  Biscuits are supposed to be puffy and fluffy, not flat and heavy.

    (I actually debated throwing the dough back into the food processor for a quick whirl to add the baking soda in, and then realized how blasphemous that would be on so many levels of baking science.  So I baked them anyway.  The Husband didn’t care that they were flat, which is good because he has 12 to enjoy all by himself.  These deplorable looking biscuits must never leave the house.)
