The Cream Cheese Eruption.

  • The Cream Cheese Eruption

Allow me to point out how multifaceted this disaster really was:

    1. The cream cheese filling in these incredible Cream Cheese Stuffed Blueberry Muffins was all over the goddamned place, which means the cream cheese was no longer in the muffins themselves.  Not part of the plan when you want to bite into a cream cheese stuffed muffin.
    2. The cream cheese filling was on the rack, burning its sticky goo onto the most annoying thing to clean in any oven.
    3. The cream cheese filling was on the bottom of the oven (not captured on the stellar photo above), which means that the whole oven needs to be cleaned now.  And Lillian, the world’s most excellent cleaning lady, isn’t coming for like two more weeks.
    4. Because the cream cheese filling oozed its way on the bottom of the oven (we’ve already been through that point), I wisely put a baking sheet underneath the muffin pan.  So then the cream cheese filling was on the baking sheet, burning up a storm.  (Seriously- look at the waft of smoke on the left side of the baking pan, where the biggest pools of carbon were cooking.)

How to not make this happen again?  I modified the recipe to thicken the cream cheese filling and chilled it before stuffing the muffins.

How to get rid of the smell of burning cream cheese every time I turn the oven on?  Call Lillian.  Because I really don’t like cleaning.
