Never (Ever) Again Microwave Brownies

  • Word to the wise: gourmet brownies aren’t born in the microwave.

    Unless you are okay with a crappy-looking crust and happen to think that it’s acceptable for brownies to take just as long to bake in the microwave as they do in the oven (longer, actually).  So if that’s what you’re after, then microwave away.  But if you’re after a simple 33 minutes and a crust that you don’t have to bury under icing (hold on- that’s not always a bad thing)- then stick with the oven.

    (Seriously- our Viking microwave has a convection feature and is supposed to sense when a lovely batch of brownies has reached perfection… 40 minutes later was the sad ending to an experiment led by an inherently lazy baker [moi] who wanted a corner-cutting 15 minute batch.  Imagine how many more brownies I could churn out in half the time?  Wishful thinking.  Off to preheat the real oven.)
