Grotesque Alien Brains.

  • Mint Bar mistake that looks like alien brains

This was supposed to look like a creamy, green layer of Callebeaut white chocolate minty goodness.

Instead it turned out like alien brains, spread over a perfectly good layer of semi-sweet chocolate.

Which would be fine if I was serving them at a kid’s Halloween party.  But I don’t know any kids and I’m not into Halloween parties, even for adults.

(The real recipe, which usually goes swimmingly, is for Chocolate Mint Candies which I do highly recommend.  Don’t give up on a perfectly good dessert just because I screwed it up with serious pizzaz.)

What went wrong, you ask?  I’m still asking myself the same thing.  I used peppermint oil (usually a wonderful step up from peppermint extract, as noted in the Chocolate Peppermint Patties post), and only a few drops of it since it’s so sinus-clearingly strong… while the recipe calls for a tablespoon of extract.  I think I was missing the extra liquid, and the oil seemed to make the sweetened condensed milk do something… unattractive.  In a martian sort of way.
