White Cheddar, Bacon & Mayo Biscuits

    Trust me on this one.

    I know you weren’t worried about the white cheddar part, and certainly not the bacon part, but you did pause at the mayo part, didn’t you?  Don’t get set in your ways, crusty old baker… remember how good the Chocolate Sour Cream Cake with Chocolate and Sour Cream Glaze was?  And to think that you scoffed at the sour cream before you even tried the tangy chocolate goodness.  Don’t you trust me by now?

    All you need to know is this: everything you love about mayo can be realized in a biscuit.

    Oh- the other thing you really need to know is this: these biscuits take two minutes to make (plus the baking time), and that’s if you’re recovering from a stroke or something.  These are Easy (with a capital e, yes.)  Cheers to more time eating and less time baking.

    I regret not adding bacon to the batter when I made these, but you can correct this by following the recipe below and ignoring the photo above which is sadly void of porky pieces.  Because bacon makes everything better.

    Adapted from Chicago Tribune’s recipe…

    2 cups flour

    1 tablespoon baking powder

    1 teaspoon salt

    1 teaspoon sugar

    1 cup + 1 tablespoon whole milk

    1/4 cup mayonnaise

    1/2 cup shredded white cheddar

    1/4 cup cooked bacon, diced

    1. Heat oven to 350°. Grease 10 – 12 standard muffin tins well and set aside.
    2. In a medium bowl, mix flour, baking powder, salt and sugar together.  Stir in milk and mayo until barely combined, then stir in cheese and bacon.  Mixture will be thick*.
    3. Scoop dough evenly into muffin tins (10 if you want bigger biscuits and 12 if you’re okay with smaller ones).  Bake for 20 – 30 minutes, until golden brown on top.  Cool on wire rack for about 5 minutes then remove from tins to finish cooling.  Serve warm.

    Tips:

    • Mayo… I’m a picky mayo lady.  I’m all about Hellmann’s.  I think olive oil mayo is gross, but if you like it, then go buts.  Just don’t send me a batch.  Oh, and don’t use light mayo (and if you do use it and it works then tell me).
    • Are these biscuits good without the bacon and cheese?  Yes.  But really, if you have bacon and/or cheese in the house, go to town.  You only live once.
    • Want a BLT biscuit, but without the lettuce (which would be gross)?  Add in chopped sundried tomatoes when you stir in the bacon and cheese.
    • *Be careful not to over mix, unless you want bullets instead of biscuits.
    • More biscuit options include the Cheddar Cornmeal Chipotle ones… and the Cream Cheese Cheddar Herb ones… and of course the Buttermilk Biscuits.  The mayo recipe is WAY easier- just so you know.
