Chocolate Peppermint Patties

  • Chocolate Peppermint PattiesChocolate and Mint have been having a sizzling affair on the well-known couple known as Chocolate and Caramel.  Make these Patties and find out why.

    (Oh- as for the peppermint oil in the recipe- you’ll want to order it online like I had to, since peppermint extract/flavoring won’t do the trick to get that rich, cool feeling in the mouth… and I couldn’t find it at two grocery stores.  Sorry.)

    Peppermint Patties:

    2 cups confectioners’ sugar

    1 1/2 tablespoons unsalted butter, room temperature

    1/4 teaspoon peppermint oil (different than peppermint extract)

    1/4 teaspoon vanilla extract

    2 tablespoons evaporated milk

    Chocolate Coating:

    8 ounces semi sweet or bittersweet chocolate, coarsely chopped

    1 tablespoon shortening

    1. Beat all ingredients for the patties in a mixer for 3 minutes on medium-high speed (scraping sides of bowl once or twice throughout), and then chill in the fridge for an hour.
    2. Scoop teaspoon sized amounts out of the batter and roll into balls, placing on a parchment lined baking sheet.  Press into flattened patties about 1/4 inch thick.  Cover and chill for at least an hour before covering with chocolate.
    3. Melt chocolate and shortening in a double boiler (or heatproof bowl placed over simmering water).
    4. Dip each flattened patty into the chocolate, and let excess drip off before placing onto parchment paper with a fork.  (Drag the tines of the fork over the surface of the patty if you’d like.)  Chill at least an hour before devouring, and store covered in fridge.

    Tips:

    • Wondering what chocolate to choose?  Semi sweet is for the yummy traditional flavor, and bittersweet chocolate is for the deep, dark chocolate fanatic.  Time and a place for both.
    • What if I want peppermint balls instead of patties?  It’s your prerogative to make tasty balls.  Instead of patties.  He he.
    • No desire to source the oil instead of extract?  Well, you could substitute peppermint extract instead, and let me know how it goes.  (Don’t get spearmint extract- tastes like toothpaste.  I’ll only make that mistake once.)
    • Looking to keep these for a long time?  I have to admit something.  I made these once and kept them in the freezer for like nine months, gradually feeding them to my chocolate-mint-loving-Husband through the year.  Seems wrong as I type this, but he never complained.  Hm.
