    Dates, huh?

    Oh yes.

    If you, like me, love stuffing a good handful of raisins in your mouth- because they’re really just candy dressed as heathy, dried up fruit- then hold on tight.  Dates are even better.

    Remember when I made the Date Squares?  (If not, drop everything, go the the store and get the ingredients, and prepare for a life-transforming event when the pan comes out of your oven.)  I fell in love with Medjool dates way back then and have been neglecting them for far too long, for no good reason.

    I’m back, dates.  It was me, not you.  And I’m chopping you up and stuffing you into an oatmeal cookie that makes for a perfect match.  Your sweet chewiness… oatmeal’s whatever oatmeal has to offer… and a hint of cinnamon to bring it all together.  More, please!

    Adapted from Quaker’s recipe…

    1/2 cup (1 stick) plus 6 tablespoons butter, softened

    3/4 cup firmly packed brown sugar

    1/2 cup granulated sugar

    2 eggs

    1 teaspoon vanilla

    1-1/2 cups all-purpose flour

    1 teaspoon baking soda

    1 teaspoon ground cinnamon

    1/2 teaspoon salt

    3 cups oats (quick or old fashioned, uncooked)*

    1 cup chopped dates (ideally fresh Medjool dates; you can also use dried dates)

    1. Preheat oven to 350° and line two baking sheets with parchment paper.
    2. In a large bowl, cream butter and sugars together (about 4 minutes).  Add eggs and vanilla; beat well.
    3. In a medium bowl, whisk flour, baking soda, cinnamon and salt together.  Add to wet butter mixture and mix well.  Stir in oats and chopped dates.
    4. Scoop tablespoons of dough onto prepared cookie sheets.  Bake 8 – 10 minutes or until light golden brown.  Cool for 1 minute on cookie sheets, then allow to cool completely on a wire rack.

    Tips:

    • *Wondering what kind of oats to use?  I use half quick (not instant!) and old-fashioned to get a bit of texture variety.  Your call.
    • Yes, adding chocolate chips would be freaking amazing.  You’re right.
    • These freeze really well if wrapped properly.
